Carrot Top Green Sauce

This recipe is flexible and doesn’t need to be exact to be delicious. I love the green sauce on chicken or pasta but also great on salad or roasted veggies or salad. I honestly can’t get enough of it when I make it!

GREEN SAUCE:

ingredients: green stuff (any carrot tops, fresh herbs, lettuce, microgreens, kale), olive oil or other oil, lemon, vinegar, raw honey, salt, garlic or garlic scapes (optional), honey.

HOW TO:

  1. Dice up a pile of greens finely as shown below. I used carrot tops, parsley, basil and lettuce.

  2. Cover with a good coat of olive oil.

  3. Add generous splash of vinegar and lots of lemon.

  4. For two cups of chopped greens add a tsp or so of honey and a sprinkling of salt.

  5. Taste. Is it fantastic?

    This can be frozen for later use. Freeze in ice cube trays and put in a bag so you can thaw out on or two cubes.
