Saskatchewan Sour Cherry Fruit Crisp

Who loves an ooey gooey, sweet and slightly sour fruit crisp loaded with cherry flavour and made with ingredients from your landscape? Me!!!

I always double this recipe, which I have included at the bottom for you. 😁

INGREDIENTS

*ingredients we have at the market*

For the filling:

  • 1/4 cup local honey *
  • 2.5 tablespoons cornstarch (or other starch like arrowroot, potato, tapioca- May need less starch)
  • 4 cups (1 lb ) sour cherries *

Note: if using frozen cherries, I do this step in a pot on medium to get the honey to mix in.

For the topping:

  • 3/4 cup organic old-fashioned rolled oats*
  • 1/2 cup organic white flour flour* (can use a gluten free blend)
  • 5.5 TBSP cup honey *
  • 6 tablespoons (3 ounces) salted butter, melted plus more for buttering the baking dish*
  • 1/2 teaspoon vanilla extract (optional)

INSTRUCTIONS

  1. Preheat oven to 350°F.

  2. Butter a 8×9 pan.

  3. Melt the butter and mix in the honey with just enough heat to melt it.

  4. Remove from heat and add cornstarch in a medium mixing bowl until lump-free. Add the fruit and lemon juice and mix. Layer in bottom of baking dish.

  5. Mix together the oats, flour and honey in a large bowl. Drizzle the butter and vanilla over the oat mixture and stir.

  6. Put oat mix evenly on top of fruit mix. Do not stir it.

  7. Bake for 20-25 minutes until golden on top and bubbly.

DOUBLE RECIPE:

INGREDIENTS

  • 5 tablespoons cornstarch (or other starch like arrowroot, potato, tapioca- May need less starch)
  • 8 cups (2lbs) sour cherries *
  • 1 tablespoon freshly squeezed lemon juice

Note: if using frozen cherries, I do this step in a pot on medium to get the honey to mix in.

For the topping:

  • 1 1/2 cups organic old-fashioned rolled oats*
  • 1 cup organic white flour flour* (can use a gluten free blend)
  • 1/3 cup honey *
  • 12 tablespoons (6 ounces) salted butter, melted plus more for buttering the baking dish*
  • 1 teaspoon vanilla extract (optional)

INSTRUCTIONS

  1. Preheat oven to 350°F.

  2. Butter a 9×13 inch baking pan.

  3. Melt the butter and mix in the honey with just enough heat to melt it.

  4. Remove from heat and add cornstarch in a medium mixing bowl until lump-free. Add the fruit and lemon juice and mix. Layer in bottom of baking dish.

  5. Mix together the oats, flour and honey in a large bowl. Drizzle the butter and vanilla over the oat mixture and stir.

  6. Put oat mix evenly on top of fruit mix. Do not stir it.

  7. Bake for 30 minutes.
