Creamy Wild Rice Pudding – GF/DF options

No story. Just recipe for you.


    3 cups cooked wild rice left in pot- ( 1 cup uncooked to make 3 cups cooked – water ratio is 3 cups water to 1 cup wild rice)

Whisk together:

    3 cups milk of any kind
    6 egg yolks
    1/4 – 1/2 cup maple syrup or honey
    1 tsp cinnamon (and extra for topping)

Add if you desire:

    Raisins, chopped Dates or any dried fruit of your liking

Pour this mixture over cooked wild rice and bribing to medium heat. Stir often to prevent cooking to fast and getting scrambled eggs. Let bubble and thicken for 5-10 minutes while stirring.

Add in:

  • 1 tsp vanilla

Sprinkle on top of each bowl more cinnamon

Sometimes I add a blob of heavy cream. 😍

Serve cold or warm, it’s so delicious either way!
